These salinas which are located in Yaiza municipal district are the largest and of highest interest in the Canary Islands. The Salinas de Janubio are one of the most important wet-land salt making areas in the world and also where the most outstanding salt making talent in the Canary Islands comes from.
The salinas date back to the 19th Century and their relevance lies in the human touch on the land which is closely linked to the traditional economy.
With a surface of 45 hectares, this ancient activity is connected to the fishing sector in Lanzarote and it provided the means necessary for many families to survive.
At its peak, production reached 10,000 tons of salt. Nowadays, the situation has changed due to a decline in the fishing sector, the generalisation of cooling techniques and the financial specialisation of the island in tourism, all factors which have caused a decrease in production.
The sea and sun are the basic elements needed to produce salt, a natural and ecological product. Let us not forget the main factor in traditional salt making, the labour put in by men and women.
Sea salt is collected in sunny periods. The collecting season lasts from April to October, depending on the climate. Wintertime is used to clean and carry out maintenance work.
